Fonio, also known as ‘Acha’ in Nigeria, is a high fiber, easily digestible gluten free grain grown in West Africa. It is packed with nutrients and essential amino acids, rich in Protein and Iron, and a good source of Magnesium, Phosphorus and Dietary Fiber.
The Iron in Fonio reduces tiredness and fatigue, while the Protein and Fiber promotes the feeling of fullness.
Fonio has a rich, slight nutty flavor and a texture much smaller than quinoa and couscous. It has a low glycemic index which makes it a perfect food for diabetics.

How to Use Fonio Flour
For pancakes: 3/4 cup fonio flour + 2 mashed ripe bananas + 1 egg + 1/2tsp baking soda (optional) – mix the batter with a little water, and fry on low heat till brown on both sides
For baking: It serves as a gluten free, fiber rich replacement for white flour
It is also ideal for African ‘swallow meal’ and for thickening sauces
